From Humble Beginnings to a Modern Revival: The Evolution of Sushi Win Jr
When Sushi Win first opened its doors back on October 1st, 2013, we had one small dream — to share great sushi and genuine hospitality with the Evergreen community. Our humble beginning started inside Unit #203, a cozy, cramped space that we weren’t entirely sure could even become a restaurant. We had zero experience, limited tables, no liquor license, and if we’re being honest — a pretty dry ambiance.
But what we did have was heart. A family’s determination. And a community that believed in us.
Growing Pains & Growth Spurts
After four years of trial, error, and a whole lot of learning, Sushi Win took its first big leap. We expanded into Unit #202 and #201, gaining not only extra tables and a liquor license, but something even more valuable — experience.
Running a restaurant isn’t just about serving great food; it’s about crafting an environment where people feel seen, welcomed, and taken care of. Every challenge, from finding the right fish to designing the perfect dining layout, became a lesson that shaped who we are today.
We learned how to balance efficiency with creativity, and tradition with innovation. And most importantly — we learned that success doesn’t come overnight, but from consistency, humility, and love for what you do.
A New Era: 2025 and Beyond
Fast-forward to 2025, and the story has come full circle. The next generation has officially taken the helm — Win Jr. has inherited the restaurant and is proudly steering Sushi Win Jr. into its next exciting chapter.
With new leadership comes new ideas, but the same core values remain unchanged: freshness, authenticity, and family.
One of my first goals as the new owner was to revamp the menu — not just in looks, but in philosophy. I wanted to elevate the quality of ingredients, refine the layout, and make every dish reflect both the precision of Japanese culinary art and the warmth of family tradition.
Every item on the menu is designed to be unique — created with the intent to stand out from the crowd. My goal was simple: to make everything we serve original. Second only to that, each bite should be the kind that makes you do a head tilt, a mouth-munching pause, and maybe even a little happy dance — because that’s what truly delicious food should do.
But the transformation didn’t stop at the food — it extended into the space itself.
Breathing New Life Into Familiar Walls
We recently completed a major remodel of the restaurant — a project that’s been a dream in the making for years. And while it’s about 95% complete (because no restaurant is ever truly finished), we couldn’t be more proud of how it’s coming together.
Here’s a glimpse into the transformation:
The Bar: Our new bar features a custom, backlit design — improvised to perfection since the wall had no studs to support external shelves. What began as a construction challenge turned into a glowing centerpiece that ties the space together.
Granite Cut Redesign: We reshaped the granite countertop so it now resembles a host stand, giving both function and flow — and yes, a much-needed shortcut walkway that saves countless laps around the waiter room.
Hand-Painted Murals: Instead of sticking to simple eggshell paint, my dad poured his heart into creating beautiful wall murals, his first-ever large-scale painting project. They bring soul and story to every corner of the restaurant.
Dining Room Layout: We reimagined the seating to balance clean lines with cozy energy, making every table feel intentional and intimate.
Ceiling Design: Painted a deep, forest green, the vaulted ceilings now pay homage to our early days (when green dominated the palette) while giving the illusion of a peaceful night sky.
Lighting & Ambiance: Gone are the harsh, office-white fixtures. In their place — warm, Japanese-inspired pendant lights that glow softly over your meal, completing the tranquil, authentic ambiance we always envisioned.
Every nail, every brushstroke, every lighting change carries meaning. It’s not just a remodel — it’s a reflection of growth, gratitude, and legacy.
What’s Next for Sushi Win Jr.
As we fine-tune the final 5%, I’m already developing a seasonal menu that celebrates the best of both tradition and innovation. Expect bold flavor combinations, elevated ingredients, and dishes that reflect the artistry of Japanese cuisine — all while staying true to the Evergreen charm that’s defined Sushi Win Jr. from day one.
