After arriving in America, she spent nearly two decades working in a medical equipment factory, slowly building a life through sacrifice, resilience, and faith.

It was there she met my father—another immigrant with a dream. Together, they laid the foundation that would one day become Sushi Win Jr., an Evergreen sushi restaurant rooted in authenticity, family values, and the determination of two people who came from nothing.

On March 31st, 2025, I had the incredible opportunity to host a hands-on sushi-making class for fifteen enthusiastic second and third graders at the Montessori School in Evergreen. The kids learned how to make their very own vegetable hand rolls, filled with fresh avocado, crisp cucumber, and sweet carrots.

Watching their faces light up as they rolled, shaped, and tasted their creations was an unforgettable experience. This kids’ sushi class wasn’t just about making food—it was a fun, educational introduction to sushi, encouraging creativity, teamwork, and a love for healthy ingredients.
