MONTESSORI SCHOOL OF EVERGREEN - TINY HANDS, BIG ROLLS

Tiny Hands, Big Rolls: Teaching Sushi to the Next Generation
This past March, I had the absolute joy of hosting a Hand Roll 101 class for a group of second and third graders at the Montessori School in Evergreen — and honestly, it might be one of the most rewarding things I’ve done since taking over the restaurant.
Watching these kids light up with excitement as they learned about sushi, got creative with their own hand rolls, and then absolutely stuffed their faces with pride? Pure gold. Some of them were fast learners too — like scary fast. They were folding, rolling, and flexing their inner sushi chefs in no time. It was messy, hilarious, and beyond heartwarming.
Moments like that remind me why I love what I do. It’s not just about running a business — it’s about sharing joy, building community, and maybe even opening the door to the culinary world for the next generation.
Since taking the reins from my dad just over a year ago (shoutout to him for laying such a solid foundation), I’ve been working hard to bring in fresh ideas without losing the soul of what makes our restaurant special. New menu. Top-tier ingredients. A “build your own roll” concept that puts creativity in your hands. And now… getting out into the community more than ever.
This hand roll event opened my eyes to so many possibilities — and yes, for those already asking, an adult version of the class is in the works (think sushi + sake + solid vibes).
If you’ve got ideas, if there’s something you’d love to see from us — I’m all ears. Whether it's another community event, a collab, or just your dream sushi combo, let’s make it happen.
Thanks as always for your support. I truly appreciate every one of you who’s been on this journey with me. Catch you soon — maybe with a hand roll in hand and a sake in the other 🍣🍶
