Sushi Win Jr. is a family-owned Japanese and sushi restaurant in Evergreen, Colorado, proudly serving our mountain community since 2013.
What began with one family’s vision for bringing quality sushi to Evergreen has grown into something much more personal: a restaurant shaped by family, creativity, craftsmanship, and more than a decade of memories shared with our guests.
Today, we continue that story with handcrafted sushi and sashimi, original specialty rolls, Japanese-inspired dishes, creative cocktails, generous portions, and a dining room overlooking the beauty of Buchanan Park and the surrounding Evergreen landscape.
We’re proud of where we came from.
And we’re even more excited about where we’re going.

When Sushi Win Jr. first opened its doors in 2013, sushi in Evergreen looked very different than it does today.
Our family set out to create a place where the Evergreen community could enjoy thoughtfully prepared Japanese cuisine without having to make the drive into Denver. Over the years, generations of local families, visitors, travelers, and sushi lovers have walked through our doors.
We’ve watched children who once came in with their parents grow up. We’ve celebrated birthdays, anniversaries, first dates, family dinners, graduations, and countless ordinary nights that became great memories around a table.
More than a decade later, we’re still here—still family-owned, still independent, and still proud to call Evergreen, Colorado home.

A New Generation Behind the Sushi Bar
Today, Sushi Win Jr. continues evolving under owner and chef Ryan Win, who grew up alongside the restaurant before eventually taking responsibility for its next chapter.
That transition came with a simple question:
How do you honor what your family built while continuing to push it forward?
For Ryan, the answer has been constant experimentation and improvement.
That means studying different cuisines and culinary techniques, exploring restaurants at every level, learning from chefs and cookbooks, experimenting with new ingredients, refining presentation, improving sourcing, and asking one question over and over:
“How can we make this better?”
That philosophy has influenced everything from the fish and sushi menu to cocktails, plating, restaurant technology, hospitality, and the overall guest experience.
Tradition gave Sushi Win Jr. its foundation.
Curiosity keeps it moving forward.
Quality You Can Taste
Great sushi begins long before a plate reaches the table.
Fish quality, temperature, texture, knife work, rice, sauces, ingredient balance, preparation, and presentation all influence the final bite.
That’s why we’re constantly evaluating what we serve and how we serve it.
Our approach isn’t about making sushi unnecessarily complicated. It’s about respecting the ingredients and paying attention to the details that guests can ultimately taste.
Whether you’re ordering sashimi, nigiri, an original specialty roll, a bowl of ramen, hibachi, or something entirely different, our goal remains the same:
A Restaurant That Could Only Exist in Evergreen
Sushi Win Jr. wouldn’t feel the same anywhere else.
Our dining rooms feature large windows, vaulted ceilings, mountain scenery, and views overlooking Buchanan Park, while the hand-painted murals inside bring another piece of Colorado into the restaurant.
The scenery changes constantly.
Snowy winter afternoons.
Bright Colorado summers.
Storm clouds rolling through the foothills.
Golden evenings over the mountains.
It’s one of the reasons we don’t think of Sushi Win Jr. simply as somewhere to grab food.
The setting is part of the experience.

Built Through Courage, SACRIFICE, & Family
The story of Sushi Win Jr. began long before our doors opened in Evergreen.
My father, Win Sr., fled political violence in Myanmar, spent years living as a refugee in Thailand, and eventually rebuilt his life in the United States. After working for more than a decade in medical manufacturing, he took a leap of faith and completed an intensive sushi-training program in California. He later spent 15 years preparing handmade sushi from a small counter inside the Evergreen Walmart, slowly building the trust of the local community and carrying a dream of someday opening a restaurant of his own.
My mother’s journey began in southern Vietnam, where war and uncertainty shaped her early life. After immigrating to the United States, she worked for nearly two decades manufacturing medical equipment alongside dad and became the steady foundation behind our family. If Dad was the dreamer willing to leap into the unknown, Mom was the anchor who helped turn that dream into something lasting.
Together, they built more than a restaurant.
They created an opportunity for the next generation, a gathering place for the Evergreen community, and a family legacy rooted in resilience, sacrifice, and hope.
Sushi Win Jr. exists because they were willing to begin again.

I Don’t Want to Make the Same Sushi as Everyone Else
There’s tremendous beauty in traditional sushi, and we respect the techniques and ingredients that make Japanese cuisine special.
But creativity has always been important to us, too.
When developing the modern Sushi Win Jr. menu, we made a deliberate decision not to simply copy familiar combinations, change an ingredient or two, give the roll a different name, and call it something new.
We wanted to experiment.
Different textures. Unexpected ingredients. Sauces. Heat. Acidity. Crunch. Richness. Presentation. Culinary influences from beyond the sushi bar.
Some experiments work.
Some absolutely don’t.
That’s part of the process.
The dishes that survive eventually become part of a menu that reflects our own culinary identity—from carefully prepared sashimi and nigiri to original specialty rolls and Japanese-inspired creations.
Because after more than a decade in Evergreen, we don’t want Sushi Win Jr. to feel interchangeable with another sushi restaurant.
We want it to feel like Sushi Win Jr.
Why “Worth the Ride”?
You’ve probably seen us use the phrase:
Worth the Ride.
It’s more than a marketing slogan.
Evergreen has always been a destination.
Getting here means leaving the city behind, watching the landscape change, climbing into the foothills, and experiencing a different side of Colorado.
We believe dinner can be part of that journey.
Come up for the mountains.
Explore Evergreen.
Take the scenic route.
Then finish the experience around a table with handcrafted sushi, drinks, family hospitality, and a view.
Whether you live five minutes away or made the drive into the mountains to find us, our goal is simple:
When you’re heading home, we want you to feel like it was worth the ride.
More Than Sushi
Not everyone who walks through our doors is a lifelong sushi enthusiast.
And that’s perfectly fine.
Our menu includes options for experienced sushi lovers, first-time guests, vegetarians, families, and people who simply aren’t interested in raw fish.
Alongside sushi, sashimi, nigiri, and specialty rolls, guests can explore cooked dishes, noodles, appetizers, vegetarian selections, cocktails, sake, Japanese beer, and other Japanese-inspired offerings.
Some guests come specifically for sushi.
Others come for a cocktail and dinner.
Some come because their kids want to see our BellaBot.
And plenty come simply because someone told them:
“You need to try this place.”
That’s exactly the kind of restaurant we want to be.

Rooted in the Evergreen Community
Being family-owned means our relationship with Evergreen extends beyond the walls of the restaurant.
Over the years, we’ve had opportunities to participate in local events, support community organizations, donate experiences, welcome students into hands-on sushi classes, and introduce younger generations to food and Japanese cuisine.
We’ve watched Evergreen support our family through good years, difficult years, celebrations, unexpected challenges, and everything in between.
That relationship means something to us.
We’re not a restaurant company that selected Evergreen as a market.
This is our community.
And we’re grateful to continue being part of it.
The Next Chapter
More than a decade after Sushi Win Jr. first opened, we’re still experimenting.
Still learning.
Still changing.
Still trying new dishes.
Still finding ways to improve the restaurant.
Still asking ourselves what Sushi Win Jr. can become.
The next chapter includes new culinary ideas, new experiences, new ways to tell our story, and a renewed commitment to making Sushi Win Jr. not merely a place to eat sushi in Evergreen—but a restaurant people remember long after they leave.
Our family started this story in 2013.
