Tiny Hands, Big Rolls — A Heartwarming Afternoon at Ralston Elementary

There are moments in this business that go far beyond food. Moments that remind me why Sushi Win Jr. exists in the first place.
This past Monday, I had the absolute privilege of hosting an after-school sushi handroll class at Ralston Elementary School—and honestly… I’m still smiling about it.
A Community That Showed Up When It Mattered Most
After the tragic events that took place at the restaurant back in February, I was navigating a storm—emotionally, physically, and behind the scenes with landlord and insurance challenges that are still ongoing.
In the middle of all that, Ralston’s PTA didn’t hesitate.
They stepped up. Supported us. Believed in us.
And I’ll never forget that.
Originally, I was scheduled to teach this class in February, but had to cancel last minute. That didn’t sit right with me. I knew how excited the kids were—and how quickly the first round of sign-ups sold out (we’re talking 10 minutes fast 😳).
So I made a promise to myself:
We’re coming back… and we’re doing it bigger.
Week One: The Sushi Squad Shows Up
The first class? Absolute magic.
The kids came in curious, focused, and surprisingly… competitive 😂
Everyone wanted to craft the ultimate veggie handroll.
Perfect rice-to-veggie ratios
Tight rolling technique
Strategic avocado placement (seriously… future chefs in the making)
I even pulled from my experience teaching at Montessori last year—adjusting portions, pacing, and prep.
But here’s the kicker…
👉 They ate ALL the nori.
Gone. Wiped out. Not a single sheet left.
So we improvised—pivoted into avocado nigiri, and honestly? The kids crushed it.
“They Had a Blast!”
A few days later, I got an email from the school:
“The kids had a fantastic time, and we’ve received great feedback from families.”
That right there? That’s everything.
Week Two: When 20 Minutes Changes the Plan
Round two. Bigger class. More prep.
I came in READY:
More rice ✅
More nori ✅
More veggies ✅
Same curriculum, same energy ✅
And this time, I had backup—Mrs. Win (taking a break from her dental world 🦷) came along to help.
We thought we were prepared.
We were not prepared.
👉 The kids went through EVERYTHING in 20 minutes.
Rice? Gone.
Nori? Gone.
Plan? Out the window 😂
When Sushi Turns Into Something Even Better
Now we’ve got an hour left. No ingredients. A room full of energetic kids.
So we pivot again.
I told them:
“Alright guys… bonus veggies are on me. Let’s have some fun.”
Enter: Simon Says
Laughter
Chaos (the fun kind)
Kids trying so hard not to mess up
Then Mrs. Win steps in with her own twist:
👉 “Coco Says”
A game from her past work events… instantly a hit.
The room turned into pure joy—kids laughing, cheering, playfully frustrated, fully present.
And honestly?
That moment had nothing to do with sushi…
…but everything to do with connection.
The Moment That Hit Me the Hardest
As 4:00pm rolled around, something unexpected happened.
The kids didn’t want to leave.
They asked:
“Are you coming back next week?”
“Can we have salmon next time?”
“Where’s your restaurant? Can we come?”
And then… the part that got me.
Some kids made extra rolls earlier—not for themselves…
but to bring home to:
siblings
parents
friends
That right there.
That’s the kind of thing you don’t teach.
That’s heart.
Why This Meant So Much
Running a restaurant—especially in a mountain town like Evergreen—comes with its challenges. But moments like this remind me:
Food brings people together
Teaching creates lasting memories
Community support is everything
And in a time where things have felt uncertain, heavy, and complicated…
This experience gave me something simple and powerful:
Hope.

To the PTA—thank you for stepping up when it mattered most.

You reminded me why I love what I do.
