(Because It Would Hurt Their Business)

Let’s be honest.

If most sushi restaurants told you the full truth about what’s going on behind the scenes…
you’d start asking a lot more questions before ordering.

And that’s exactly why they don’t.

“Fresh Never Frozen” — The Industry’s Favorite Line

You’ve heard it. Everyone has.

It sounds premium. It sounds exclusive. It sounds like you’re about to get the best sushi of your life.

But here’s the reality:

👉 “Fresh” doesn’t automatically mean high quality
👉 “Frozen” doesn’t automatically mean low quality

And yet, that phrase gets thrown around like it’s the gold standard.

Here’s what they won’t tell you:

  • “Fresh” fish can be mishandled long before it hits your plate

  • “Fresh” fish can sit longer than it should

  • “Fresh” fish can cost more… without actually being better

Now let’s talk frozen.

Modern flash freezing? It’s not some cheap shortcut—it’s a tool.

It preserves texture. Locks in flavor. Kills parasites.

But here’s where it gets ugly:

Some fish gets treated with carbon monoxide to keep that bright red “fresh” look.
Some gets color-enhanced to stay visually appealing longer than it should.

Looks amazing. Sells great.

But it’s not telling you the whole story.

If You Need That Much Sauce… Something’s Wrong

Let’s talk about those rolls.

You know the ones.

  • Dripping in sauce

  • Covered in crunch

  • Five different flavors fighting for attention

At some point, you’re not eating sushi anymore…
you’re eating a distraction.

Because here’s the uncomfortable truth:

👉 The more a roll is covered up… the less confident someone might be in what’s underneath it.

I said might be.

But if you’ve been around long enough, you start to notice patterns.

You Can Dress It Up… But You Can’t Hide It Forever

I don’t care how good the presentation is.

I don’t care how fancy the menu sounds.

If the fish isn’t right—you’ll feel it.

  • That off texture

  • That muted flavor

  • That moment where you’re like… “this is good… but something’s missing”

That “something” is usually honesty in sourcing and handling.

And no amount of spicy mayo is fixing that.

The Part Nobody Likes Talking About

Here’s where it gets uncomfortable.

There are places that:

  • Charge premium prices for average product

  • Prioritize margins over experience

  • Shrink portions while raising prices

  • Focus more on aesthetics than flavor

  • Build menus to sell… not to serve

And the worst part?

It works.

Because most guests aren’t being taught what to look for.

They’re being marketed to.

What I Actually Care About (And Always Will)

I don’t care about being the flashiest spot.

I care about doing things right.

That means:

  • Working with suppliers who have integrity

  • Keeping quality consistent

  • Serving fish that’s been respected from source to plate

  • Treating every single guest the same

No VIP treatment. No shortcuts. No cutting corners behind the scenes.

Just real food.

Simple Done Right Is Harder Than Complicated Done Loud

Anyone can throw a bunch of ingredients together.

That’s easy.

What’s hard?

Taking a few ingredients… and making them perfectly balanced.

That’s why I stand by K.I.S.S. — Keep It Simple, Stupid.

Because simplicity exposes everything.

You can’t hide behind it.

But Yeah… I Still Like to Push the Envelope

I’m not here to play it safe.

Take my “Lost City of Atlantis” roll.

Pear in sushi isn’t exactly standard.

But when you actually understand flavor…

  • Pear balances sweetness

  • Spicy truffle brings depth

  • Blue crab enhances that ocean element

  • Tuna and salmon tie it all together

That’s not random. That’s intentional.

That’s creativity with purpose—not chaos.

The Moment That Matters (You Know It When It Happens)

There’s one thing I chase every day in this restaurant.

It’s not hype. It’s not reviews.

It’s that moment when someone takes a bite…
and just pauses.
